- 1-inch piece ginger, sliced (approx. 15g or 0.5 oz)
- 1 small bitter melon (ampalaya), seeded and sliced
- 2 cups spinach or malunggay leaves
- 1 tbsp cooking oil
- 6 cups water or broth
- 1 tbsp fish sauce (patis)
- Salt and pepper to taste
- 1/4 cup chopped green onions (for garnish)
INSTRUCTIONS
1. Cook the Mung Beans: Drain the soaked mung beans. In a pot, combine the mung beans with water or broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes, or until the beans are tender.
2. Sauté Aromatics and Pork: In a separate pan, heat oil over medium heat. Add onions, garlic, and ginger. Sauté until softened. Add the diced pork and cook until lightly browned.
3. Combine Ingredients: Add the sautéed pork mixture to the pot with the mung beans. Add the bitter melon slices. Simmer for 10-15 minutes or until the vegetables are tender.
4. Add Greens and Season: Stir in the spinach or malunggay leaves and simmer for 1-2 minutes until wilted. Season with fish sauce, salt, and pepper to taste.
