INGREDIENTS

  • 1 kg (2.2 lbs) pork belly, cut into cubes
  • 1/4 cup cooking oil
  • 1 onion, chopped (approx. 150g or 5.3 oz)
  • 4 cloves garlic, minced (approx. 10g or 0.35 oz)
  • 2 large tomatoes, chopped (approx. 300g or 10.6 oz)
  • 1/2 cup tomato sauce
  • 4 cups water
  • 2 saba bananas, cut into chunks (approx. 300g or 10.6 oz)
  • 1 can (425g or 15 oz) chickpeas, drained and rinsed
  • 2 potatoes, cubed (approx. 300g or 10.6 oz)
  • 2 carrots, cubed (approx. 200g or 7 oz)
  • 1/2 head cabbage, cut into wedges
  • 2 tbsp fish sauce (patis)
  • 1 tbsp brown sugar
  • 1/2 tsp ground black pepper
  • Salt to taste
  • Green onions, chopped (for garnish)

    INSTRUCTIONS

    1. Brown the Pork: In a large pot, heat oil over medium heat. Add the pork belly and cook until browned on all sides. Remove from the pot and set aside.

    2. Sauté Aromatics: In the same pot, add onions and garlic. Sauté until softened and fragrant.

    3. Make the Base: Add tomatoes, tomato sauce, and water to the pot. Bring to a boil, then reduce heat and simmer for 10 minutes.

    4. Add Pork and Other Ingredients: Return the pork belly to the pot. Add saba bananas, chickpeas, potatoes, carrots, cabbage, fish sauce, brown sugar, and pepper. Bring to a boil, then reduce heat and simmer for 45-60 minutes or until the pork and vegetables are tender.

    5. Season and Serve: Season with salt to taste. Garnish with chopped green onions and serve hot with rice.
