INGREDIENTS
- 1 kg oxtail, cut into 2-inch pieces
- 1/2 cup ground toasted rice (or 1/4 cup peanut butter)
- 1/4 cup annatto seeds, soaked in 1/2 cup water
- 1 onion, chopped
- 4 cloves garlic, minced
- 1-inch piece ginger, sliced
- 2 large tomatoes, chopped
- 1 eggplant, sliced
- 2-3 string beans (sitaw), cut into 2-inch pieces
- 1 bunch bok choy (pechay), cut into bite-sized pieces
- 1/2 cup ground peanuts
- Fish sauce (patis) to taste
- Salt and pepper to taste
- Bagoong (shrimp paste) for serving
INSTRUCTIONS
- Cook the Oxtail: In a large pot, place the oxtail and cover with water. Bring to a boil, then reduce heat and simmer for 2-3 hours or until the meat is tender.
- Prepare the Peanut Sauce: In a blender, combine the ground toasted rice (or peanut butter), annatto seeds and soaking water, onion, garlic, ginger, and tomatoes. Blend until smooth.
- Sauté the Vegetables: In a separate pot, heat some oil and sauté the eggplant, string beans, and bok choy until slightly softened.
- Combine and Simmer: Add the peanut sauce to the pot with the oxtail. Add the sautéed vegetables and ground peanuts. Simmer for 15-20 minutes or until the sauce thickens and the flavors meld.
Season and Serve: Season with fish sauce, salt, and pepper to taste. Serve hot with steamed rice and bagoong on the side.
