Deep in the heart of Alburquerque, Bohol, lies a culinary treasure with a history as rich as its flavor: Asin Tibuok. This unique salt, produced using a labor-intensive, pre-Hispanic method, is more than just a seasoning – it’s a testament to Bohol’s enduring heritage and the intricate connection between its people and the sea.

A Legacy of Tradition

Asin Tibuok, meaning “whole salt,” is crafted using techniques passed down through generations, mirroring the rhythm of the rice harvest. In the past, once the salt orbs were formed, they were bartered for kilos of rice, symbolizing a harmonious exchange between land and sea.

The Art of Salt-Making

The journey begins with hundreds of coconut husks immersed in saltwater pools for months. These husks, infused with the essence of the sea, are meticulously harvested, sliced, sun-dried, and then burned in a carefully controlled process. Seawater is continuously poured onto the smoldering husks for days, yielding a concentrated, salty ash.

This ash is then placed in large filters, through which seawater is poured, creating a brine so potent it almost shimmers. Specially crafted clay pots are then placed over a wood fire, and the brine is patiently ladled into the bubbling vessels for eight hours. As the brine evaporates, salt crystals form, creating a smoky, spherical orb weighing roughly a kilo.

The Asin Tibuok, cracked and grated, imparts a unique flavor profile – a delicate balance of smoky notes and a subtle sweetness, a testament to the meticulous craftsmanship and natural ingredients used in its creation.
