INGREDIENTS

  • 1 kg (2.2 lbs) pork shoulder, cut into cubes
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup cooking oil
  • 1 onion, chopped (approx. 150g or 5.3 oz)
  • 3 cloves garlic, minced (approx. 10g or 0.35 oz)
  • 1 red bell pepper, diced (approx. 150g or 5.3 oz)
  • 1/2 cup tomato sauce
  • 1 cup water
  • 2 potatoes, diced (approx. 300g or 10.6 oz)
  • 2 carrots, diced (approx. 200g or 7 oz)
  • 1/2 cup green peas
  • 2 bay leaves
  • 1/2 tsp ground black pepper
  • 1/4 tsp salt
  • Liver spread (optional, for extra richness)
  • Raisins (optional, for sweetness)

    INSTRUCTIONS

    1. Marinate the Pork: In a bowl, combine pork, soy sauce, and vinegar. Marinate for at least 30 minutes.

    2. Sauté Aromatics: Heat oil in a pot over medium heat. Add onions and garlic, sauté until softened.

    3. Brown the Pork: Add the marinated pork to the pot and cook until lightly browned on all sides.

    4. Add Remaining Ingredients: Pour in the tomato sauce and water. Add the potatoes, carrots, bell peppers, bay leaves, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes or until the vegetables are tender.

    5. Final Touches: Add green peas, liver spread (optional), and raisins (optional) during the last 5 minutes of cooking. Season with salt to taste.
